Spring is the season of rejuvenation, even its name evokes a youthful energy - who isn't finding an extra bounce in their step with the warmer days, to herald the end of winter's icy grip.
As the days begin to lighten and so does the food. Abundant with verdant leafiness, curling tendrils and snappy baby vegetables, spring is all about leafy greens and the refreshing crunch of salads .
In March the likes of purple sprouting broccoli, chicory and punchy herbs such as tarragon and thyme have arrived to perk things up. Our chefs are eagerly awaiting sweet new season lamb in time for their Easter menus and come May, lots of our menus will witness the welcome return of plump asparagus spears and nutty Jersey Royals.
