Peter Weeden

Peter Weeden, has been the Head Chef of Paternoster Chop House since its opening in autumn 2004.

Peter's cooking style: Peter's food is resolutely British. Peter enjoys cooking simple, rustic food that concentrates on the quality of produce and is conspicuously seasonal. Following a 'less is more approach', Peter likes to get 'back to basics'. He bakes his own bread daily on site; air dries his own ham and purchases meat on the bone which he butchers in-house, so that customers can choose from a range of different cuts.

Previously: Peter spent five years cooking classic, regional French food at Coq d'Argent, a restaurant also part of D&D London.
